SIMPLICITY
This is my latest cake made for a frequent Lodgepole customer that has watched me grow in my position as the pastry chef over the years! I have always received messages of encouragement & kind words from Asma over the years (I think she is my biggest fan!!) Asma contacted me when her sister got engaged & I made an apricot & vanilla themed cake for that a few months ago & I just had the opportunity to create this cake for their celebratory dinner at Lodgepole. I LOVE making connections with guests at the restaurant which is what makes me really miss working as a server & bartender.
A simple three layer vanilla sponge cake w vanilla swiss merengue buttercream & raspberry filling. This cake was a PROJECT for both me & my poor little kitchenaid mixer!! I ended up having to call my dear friend Tucker to quite literally hold 5 bags of frozen corn against my mixer & the mixing bowl to make this frosting work. Where there is a will, there is a way!! This cake turned out fantastic & I am so proud of how well I maintained my composure when things got a little sticky. Cake is a fun side gig for me and has been such a long journey and I am really looking forward to honing in on cake decorating over the next year now that I have reached a comfortable point with the basics of cakes.
