Ah yes, the month of September … the chilly mornings, the hot afternoons, the indecisiveness regarding what to wear so you end up wearing a heavy flannel with booty shorts, the odd transition from late summer flavours into early fall, deciding if you want to get a pumpkin spice latte from starbucks… that’s September. This dessert literally tastes like this odd month. Its bright, smooth, delicate, playful. I “spritz” three oranges worth of peels into the goat cheese mousse, which is a pain, but oh so worth the hassle. Grape is one of my favourite flavours to use in desserts, it’s so underused and underrated. This dessert was a fantastic finish to my time working at Lodgepole as the executive pastry chef.
