beet tres leches

Looks just like a beef tartar! Tastes nothing like a beef tartar!!! This dessert had its time on the Teatro Zinzanni winter 2023 menu. The r&d process was a bit of a doozy. I really thought the best way to attack the concept would be to bake a beet cake, but that never worked. The vivid colour simply comes from the tres leches soak.
