petite gateaux

My belgian chocolate petite gateaux was featured for Lodgepole’s ‘23 Valentines day dinner. The goal with this dessert was to execute something simple plating wise (so I could enjoy the valentine’s dinner instead of working it). I have really struggled with the balance of flavour complexity & plating simplicity, but I can proudly say I have come a really long way with that & will continue to further perfect that balance. My favourite part of this dessert was actually the black sesame cocoa tuile, it has that yummy sesame flavour that danced so well with the local strawberry coulis that I made from some of our canned summer ‘22 strawberries.
