ube sponge cake

This dessert was entirely inspired by spongebob flowers! I had made a smaller portioned spin on my banana-cajeta-chocolate tart this past december to celebrate the college graduation of my dear sweet amazing friend, Kalyssa, and one of my dear sweet amazing coworkers made a comment that the shape of my mini tart shells was adjacent to the shape of spongebob flowers. I instantly thought about an ube based dessert to recreate the same colour and shape of the spongebob flower. Spring ‘23 rolled around ‘n’ badabing badaboom, I had myself a cute, fun, springy, bright, acidic, refreshing, and odd dessert. The contrast between the yellow & purple, the floral dance between the rose & lychee … truly a standout dessert showcasing my creativity.
